Red "Red" Velvet Cupcakes


I call these Red Red Velvet cupcakes because they are super red. I also have a Chocolate Red Velvet Cupcake recipe, so I can distinguish one from the other in my recipe manager.

This is a great recipe for any occasion where you have to take something. They are always a hit, and you won't come home with any leftover.

Buy a cardboard cupcake holder and you don't have to worry about leaving your container behind either.

Just so you know, you can make them any color you want. One Halloween, I made them orange and put candy pumpkins on top for the decor.

Let's say these are for a 4th of July party... you can garnish with red, white and blue sprinkles.

Red Red Velvet Cupcakes with Cream Cheese Frosting

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

For the frosting

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted powdered sugar
  • 1 cup of pecans (optional)

Baker's Note

The icing is what makes these cupcakes so delicious. Stand-alone the cupcakes aren't that sweet. Adding pecans to the icing, makes them even more delicious.


Directions

Preheat the oven to 350 degrees. Sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl beat the eggs and add the oil, buttermilk, food coloring, vinegar, and vanilla. Add the sifted dry ingredients to the wet and mix until combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Note: This recipe will make 24 cupcakes. You can also make 48 minute cupcakes.

For regular sized cupcakes, bake in oven for about 18 to 22 minutes. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the powdered sugar and beat until thoroughly combined. Whip on high speed to fluff.
