Healthy Halloween Grape Eyed Monster Snack Pack Pudding Cups

I am always looking for a fun and easy dessert to make for Halloween. This year I got my little one involved. My Mom was over for dinner and we were brainstorming different ideas. I wanted something with fruit, and what goes so well with fruit? Chocolate. Snack Pack chocolate pudding cups would be perfect. One cup has as much calcium as an glass of milk. I’d add some fruit and we would have a healthy snack or dessert. I went to Walmart to get the Snack Pack pudding cups. They had a fantastic array or flavors, but I settled on chocolate. I had found some adorable candy eyes that I just had to use. Grape Eyed Monsters were born.

I set out everything my daughter would need, and she set to work putting them together. I put the peanut butter into a little plastic bag and snipped off the corner. It made it easy to pipe a little dot of peanut butter onto the candy eyes and glue them to the grapes. We also used three different sizes of toothpicks and decided to make a Daddy monster, a Mommy monster and a little baby monster. We varied the number of grapes to give different sizes. In five minutes we had an absolutely adorable Halloween treat. Literally it took us about five minutes. That was five minutes of time well spent.


My Mom suggested toasted coconut be added. The toasted coconut looks like burnt grass or hay, plus I used it for hair on the Mommy monster. This was the missing piece. The coconut adds so much to the finished product. Plus I love toasted coconut with chocolate. My daughter couldn’t wait to bring our creation into school the next day. She had to show everyone at lunch how she put the monsters together, and how cute they looked in the pudding cup. This was a home run. Try it on your little “creatures”. I am sure they will love this healthy Halloween snack as much as my daughter did.

Print Healthy Halloween Grape Eyed Monster Pudding Cups

Serves: 8 servings
Ingredients
  • 2 packs of Snack Pack Chocolate Pudding Cups
  • 48 seedless green grapes
  • 48 candy eyes
  • 2 tbsp. Peter Pan Peanut Butter
  • 8 long toothpicks
  • 8 medium length toothpicks
  • 8 small length toothpicks
  • ½ cup toasted unsweetened coconut

Instructions
  1. Skewer three grapes onto the longest toothpicks pushing all the way to the top.
  2. Skewer two grapes onto the medium toothpicks pushing grapes all the way to the top.
  3. Skewer one grape onto the shortest toothpick pushing all the way to the top.
  4. Place peanut butter into a small plastic bag and cut off a small corner of the bag.
  5. Pipe a dot of peanut butter onto an eye and place on a grape. Repeat until each grape has an eye.
  6. Place about a tablespoon of coconut on the top of each pudding pack.
  7. Insert the large toothpick into the back corner of the pudding cup. Let it rest on the back of the cup.
  8. Place a dab of peanut butter onto the top of the two grape skewer and lightly push into coconut.
  9. Insert toothpick into the other side of the pudding cup.
  10. Insert the small toothpick into the cup.
  11. Repeat until all pudding cups are completed.
