Mashed Sweet Potatoes

I realized the other day that I have never made mashed sweet potatoes. I was making a delicious chicken recipe tonight and thought mashed sweet potatoes would be a perfect side dish. The potatoes cooked quickly and came together quite easily. I loved the buttery flavor and the touch of nutmeg. We all, kids included, loved these sweet potatoes.

Put the sweet potatoes in a large pot and add just enough cold water to cover them. Bring to a boil and cook until tender, about 15 minutes.

Place milk, butter, sea salt & freshly cracked pepper, taste together in a glass bowl. Cook for 30 seconds in the microwave, or until warmed.

Drain and return the potatoes to the pot and place back on the stove with the burner turned to low which dry up any excess water. Add the warmed milk mixture and mash with a hand masher or beater until smooth. Taste and add more salt or nutmeg if needed. Serve immediately. Enjoy.
