Berry Jello Salad


Hello, everyone! Today I wanted to share with you a great spring recipe for Berry Jello Salad! It’s perfect for spring because it’s a tasty light dessert…plus it doesn’t have any strange ingredient in it like a lot of jello salads do. Wouldn’t you agree that light desserts just taste right this time of year?

I hope you all had a great Easter and are enjoying some beautiful spring weather where you live!! Here in Ohio our weather has been all kind of extremes…it even snowed this week. I can’t remember it ever snowing in the middle of April. Craziness! It’s been nice for a few days so I am hoping that the warm sunny weather is finally here to stay! It’s about time!?!

On warm sunny days I look forward to grilling out and light desserts like this Berry Jello Salad! Just look at that fruity deliciousness!

I adapted this recipe from another favorite of mine – Orange Fluff Jello Salad! I always make it this time of year and it has become a family favorite. I like the Orange Jello Salad, but this berry version gives it a run for it’s money, for sure. Both are awesome and it really just boils down to if you are a berry or citrus lover!

We eat it for a dessert, but I know a lot of people eat jello salads as a side dish instead. You do whatever you wish!

I know jello salad can be a turn off to some and it’s no wonder why – there are some crazy ingredients hidden in some jello salads. That’s not the case for me or this jello salad. Rest assured it’s all “normal” dessert-type ingredients.

I once saw a lime jello salad with shredded carrots all through it at a dinner. Ummm…no thanks, I’ll pass on that one. Nasty! And don’t even get me started on jello salad with cottage cheese. I’ve heard that it’s good, but I can’t get past the idea of it to even try it. It’s not for this girl.

This jello salad starts out with boiling vanilla pudding mix and raspberry jello with some water. It creates a nice thick fruity mixture. After that completely cools it’s time to get down to business by adding in some cream cheese, and that takes the creaminess up a notch.

Finally you fold in cool whip, berries, and mini marshmallows. And that’s it! It’s super simple to make!

I used frozen berries when I made it because the fresh at my grocery store didn’t look so good. If you have access to fresh berries, I would do that. If not, no biggie – just use frozen like I did.

This recipe is perfect for any picnic or spring get-together that you may have coming up! I hope you give it a try!

Berry Jello Salad

Ingredients

  • 1 large box Vanilla Pudding (Cook & Serve)
  • 2 small boxes Raspberry Jello
  • 2 cups water
  • 1 - 8oz. cream cheese, softened
  • 1 tub Cool Whip
  • 2 cups berries, fresh or frozen (thawed)
  • 1/2 bag of mini marshmallows

Instructions

  1. Add pudding mix and jello to a medium saucepan. Add 2 cups of water and stir. Bring to a boil and then remove from heat. Refrigerate until cool and thickened (about 1-2 hours).
  2. Add the softened cream cheese and the jello mixture to the bowl and mix unit fluffy and smooth, a few minutes. Fold in the tup of Cool Whip. Add the berries and marshmallows and refrigerate an hour before serving.

Notes

This can be made a day or so ahead of serving time. If I'm making it a day or two ahead I usually leave the marshmallows out and add them before serving because they tend to get soggy.
