Chocolate Fudge Sundae Iced Coffee

A long LONG time ago, the summer of my freshman year of college, I took a road trip with some of my friends to Ocean City, MD. It was pretty much the first time I had gone to the beach without any members of my family and it was WONDERFUL!
The hotel we stayed at had a snack & drink bar by the pool and whatever food or drink you ordered would be delivered directly to your pool chair. I was seriously in heaven! I sat by that pool reading and sipping fruity non-alcoholic drinks with little umbrellas practically the whole time I was there. I had such fun memories of that little vacation!
Of course it was ruined by the fact that I insisted I didn't need to wear sunblock while I layed out on the beach for about 4 hours. And my bathing suit had a cutout along my lower back. The WORST sunburn of my life. Ouch!
What is it about summer that makes us pull out all the fun drinks? While I wasn't at the time, I'm now completely addicted to coffee (no shame here, people) and most of the time I'm sitting with an iced coffee in my hand instead of a fruity umbrella drink!


These days, a trip to Walmart by myself is vacation, can I get an AMEN?! Just look at all those Keurig Brew Over Ice options - can't wait to try them all!


I'm usually a Plain Jane iced coffee type, but this Chocolate Fudge Sundae Iced Coffee REALLY kicks it into high gear! Instead of brewing over ice, you actually brew the K-cup over vanilla ice cream - seriously, genius! At the end of your long summer day while your kids are enjoying their popsicles, whip yourself up some of this. I swear, you will feel like your are sitting poolside - yum!

Chocolate Fudge Sundae Iced Coffee
Donut Shop regular iced coffee K-cup 2 scoops vanilla ice cream hot fudge sauce, slightly warmed ice whipped cream

Place two scoops of ice cream in the bottom of a 16 oz plastic cup (I used my favorite faux mason jar cups from Walmart). Drizzle hot fudge sauce over ice cream. Brew K-cup (8 oz setting) over ice cream and chocolate sauce. Stir until ice cream is completely melted. Add ice as desired and top with whipped cream and additional chocolate sauce.

We go through lots of K-cups in this house, did you know that Keurig has a recycling program for used K-cups?
