Sweet Potato Cinnamon Rolls with Marshmallow Filling





With sweet potato puree in the dough and stuffed with ooey, gooey marshmallow fluff, these are some of the best cinnamon rolls I've ever had!




I love pumpkin. You guys must clearly know that by now, right? And no, I'm NOT done sharing some pumpkin recipes with you all this year. :) Just in case you were worried.
But I'm always surprised there are so little sweet potato recipes this time of year. They're so similar in taste and texture. Even the color is close! Sure I've seen sweet potato casseroles around, but what about baked goods with sweet potato? It's just not as popular for some reason. I mean, if you saw a "Sweet Potato Spiced Latte" at Starbucks, would you order it? I SO would - that sounds delicious to me!
Well hopefully I'm not the only one who thinks this way because I've been dreaming up a new cinnamon roll idea with sweet potato, only I just hadn't gotten around to testing it out yet. Then about two weeks ago, this wonderful package arrived at my door:

I really did squeal when opened this flour-filled box from Bob's Red Mill! Man it was heavy too, haha! Of course I knew I had to do some testing with all this flour to play with. I honestly love Bob's Red Mill, I've been using their alternative flours for a while now to cut my carb intake as much as I can (almond and coconut flours are my favorite). I used the Organic Unbleached White Flour for these delicious and fluffy rolls. It is freshly milled from Organic hard red wheat and is not enriched with any additives. It is definitely a kitchen staple and can be used for any and all of your baking needs.
These Sweet Potato Cinnamon Rolls would be perfect for breakfast on Thanksgiving or Christmas morning. And, oh man. That. Marshmallow. Filling. Seriously! Melty, messy, brown sugar and marshmallow fluff caramelizes onto the bottoms of these rolls and makes a sweet crust. These are honestly some of the BEST cinnamon rolls I've ever had!

Sweet Potato Cinnamon Rolls with Marshmallow Filling makes 12 rolls
3 1/4 cups flour, divided 2 1/4 teaspoons active dry yeast 1/2 cup sweet potato puree (just bake/boil a sweet potato, then peel and puree in a blender or food processor) 2/3 cup milk 2 tablespoons sugar 2 tablespoons butter 1/2 teaspoon salt 1 egg, beaten 7 oz jar marshmallow creme 1/2 cup brown sugar 1 teaspoon cinnamon handful of miniature marshmallows for garnish

In the bowl of a stand mixer, stir together yeast and 1 1/2 cups flour. Meanwhile in a small saucepan, whisk together sweet potato puree, milk, and sugar until smooth. Add in the butter and heat over medium low heat until butter is almost melted and mixture is very warm to the touch, but not boiling. Pour over the flour mixture along with the beaten egg, and turn mixer on low (with a dough hook) to combine batter. Add in remaining 1 3/4 cup flour slowly scraping the sides as necessary, add in an additional 1/4 cup if it's too wet. The dough should be sticky, but the sides of the bowl should be clean.




Allow the mixer to knead the dough for 8 minutes, then transfer to a greased bowl, cover, and let rise until doubled - about 1 hour. Punch dough down and roll into a large rectangle on a floured surface. Using a spatula that has been sprayed with non-stick spray, spread fluff over the dough as evenly as possible. Sprinkle with brown sugar and cinnamon.




Roll up lengthwise and cut into 12 even slices. Place the slices cut side down into two well greased pie plates (6 rolls in each, the fluff will smush somewhat out of the bottom, this is OK!). Cover and let rise 30 minutes. Bake at 375 for 15 minutes. Sprinkle mini marshmallows over the top and bake an additional 2-3 minutes or until the marshmallows are toasted.
