These Iced Applesauce Oatmeal Cookies are perfectly sweet!

Yep. More apples. y’all.

If you’re looking to overdo a seasonal ingredient, you’ve come to the right place. Because I’m not of the opinion there is “too much of a good thing” in pretty much any aspect of life. Good things can come in abundance. I won’t hate it, that’s for sure.

I mean has anyone ever heard someone say, oh gosh..please, don’t make me THAT rich. That’s just TOO MUCH MONEY.

Or, please I don’t really want to have THAT many cute purses. Too many cute accessories might be hazardous.

No one ever says that. Ever.

So my point…apples. They’re good, they’re in season and I plan on WERKing them OUT.

I thought I would try to make a slightly lighter cookie…and sub in some applesauce for the butter. What ended up happening was I got a delicious cookie, with less butter…but I wouldn’t exactly call it “light”. There is a whole mess of brown sugar in there…and of course I made a delicious maple glaze to ice them with.

BUT I will say they are pretty tasty with a cup of coffee in the morning. Which basically has nothing to do with anything but I thought I would mention it.
So let’s talk details.I mixed in some applesauce right into the sugar and butter. It kind of looked a little bit curdled and I thought I might have messed up…but I di’int. Just press on.

Add in your flour, oats etc and you’ll have normal cookie dough.

Plus throw in a few apples for good measure.

Drop it on a lined baking sheet and bake!

The glaze is also super simple…just powdered sugar, maple syrup and a little heavy cream.

When the cookies are done drizzle the icing all over…

You could even make the icing a bit thicker by adding less cream and spread the icing on top, if you’d prefer a thicker layer.

And there you have it..a loaded appley cookie. With icing. It’s a good day.

Iced Applesauce Oatmeal Cookies

Ingredients

  • 4 Tbsp butter, room temp
  • 1 1/2 cups light brown sugar
  • 1 egg
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 1/2 cups old fashioned oats
  • 2 cups flour
  • 1/2 cup small diced Granny Smith apples (about 1 small apple)
  • Icing

  • 1 cup powdered sugar
  • 2 Tbsp real Maple Syrup
  • 3 Tbsp heavy cream

How to Make

  1. Preheat oven to 350°
  2. Line baking sheet with parchment and set aside.
  3. Mix butter and sugar together with mixer until combined, about 2 minutes. Add in egg, applesauce, vanilla, baking soda and salt and mix until incorporated, about another minute. Mixture will look slightly curdled.
  4. Turn mixer to low and add in oats and flour, mixing until combined. Stir in apples.
  5. Drop dough by heaping tablespoon onto lined pan, about 2 inches apart and bake for 10-12 minutes until tops are set.
  6. Transfer cookies to wire rack to cool.

    Icing

  7. Mix all icing ingredients in a bowl until smooth and then drizzle over top

Notes

optional addition ~ 1/2 tsp cinnamon added when you mix in salt and baking soda.
