Peppermint Molten Lava Cake

Molten Lava Cakes feel & taste special. The notation on the menu when you’re ordering dinner that if you’re interested in ordering a molten lava cake, order while ordering your entree only makes it feel more indulgent. It gives you the illusion that someone is slaving back in the kitchen to fulfill your chocolate cravings with decadence.

In reality, molten lava cakes are just as easy as cupcakes & cookies. Just a few minutes hands on time, followed by 10 minutes in the oven. What makes it special is that you serve it when the timing is right! I often make this dessert ahead, bringing it to room temperature at dinner & simply placing it in the oven after dinner – perfect timing for dessert & wine. In spirit of the holiday, this molten lava cake has a little twist – peppermint. Can it be Christmas year round, because it’s amazing!

Serves 0Ingredients
  • 3/4 c butter
  • 1 c chocolate chips
  • 1/2 c cream
  • 6 eggs
  • 2/3 c sugar
  • 1 tsp peppermint
  • 1/2 tsp salt
  • 1/2 c flour
Instructions
  1. Preheat oven to 400 degrees.
  2. Spray cupcake tins with cooking oil.
  3. Combine butter, chocolate chips & cream in microwave safe bowl & warm in 30 second increments, whisking vigorously. Allow to slightly cool.
  4. In a large bowl, combine eggs, sugar peppermint extract, salt & flour.
  5. Gradually add chocolate mixture to egg mixture. Pour into cupcake pan & bake 10 minutes.
  6. Wait one minute, then invert onto a cookie sheet & transfer to plates with a spatula. Serve immediately.
