Thai Grilled Chicken

Summertime doesn’t have to mean only burgers and dogs on the grill (but they still are awesome). For me, I get bored so easily with grilled foods. Which is why you may have noticed some new burger twists lately. Grilled Chicken and I have a bit of a checkered past. Most of the time I find it rather boring. But I can proudly say, this Thai Grilled Chicken is anything but boring!

If you are a long time follower of mine, you know that I used to be so scared of creating Asian cuisine. I was more than happy to only enjoy Asian flavors when ordering out….UNTIL I finally gave in and tried to make something at home. It went great. In previous posts, I mentioned that ingredient lists in Asian style cooking can be overwhelming. There sometimes seems to be tons of ingredients that you may not be familiar with. But I also mention that what I did, was start buying some of the Asian staples, one at a time until I had my pantry stocked of the “must have” Asian ingredients (fish sauce

, oyster sauce
, soy sauce
etc.). Now when the mood strikes, it’s no big deal, I just head to my pantry and get cooking.

When we order Thai food, we usually get some sort of chicken skewer appetizer. While this is not exactly that, it’s a nod to it. I would say, this Thai Grilled Chicken is sort of the best of All American Grilling meets Thai Chicken Skewer (minus the skewer).

Adjust your heat level by adjusting the amount of chili garlic sauce

. Just add a little at a time and taste a long the way until you reach the heat level you want. Chili Garlic Sauce has quickly become one of my favorite ingredients. And to think 2 years ago, I had never even heard of it.

Thai Grilled Chicken

Ingredients

  • 1.5 lb boneless chicken tenders (or boneless breasts cut into smaller portions)
  • 2 C white rice
  • 1 green onion
  • Marinade Ingredients:
  • 2 T lime juice, fresh
  • 2 garlic cloves, minced
  • 2 tsp ginger paste
  • 2 T soy souce
  • 1.5 T fish sauce
  • 1 T olive oil
  • Dipping Sauce Ingredients:
  • 1-2 T chili garlic sauce (adjust for you taste)
  • 2 garlic cloves, minced
  • 2 T fish sauce
  • 1.5 T rice vinegar
  • 2 T lime juice, fresh
  • 2 tsp sugar
  • 1 tsp sesame oil
  • 2 T olive oil
  • 2 green onions (scallions), sliced, divided
  • 1/2 C cilantro, chopped

Instructions

  1. Combine marinade ingredients. Place chicken in a resealable storage bag and pour marinade over chicken. Seal bag and maneuver so that all the chicken pieces are covered with the marinade. Place in refrigerator and allow to marinate 2-3 hours.
  2. While chicken is marinating combine sauce ingredients, whisk together well and refrigerate.
  3. Preheat grill to medium heat.
  4. Place chicken on grill, discard marinade. Cook, each side of chicken about 4-6 minutes, until no longer pink in the middle.
  5. While chicken is cooking, prepare your rice according to package instructions.
  6. Serve chicken over or along side rice. Garnish with remaining green onion and serve with dipping sauce.
