Sweet and Spicy Balsamic Barbecue Pork Medallions with Hatchery

I love trying new products from local food artisans. It’s one of the reasons I enjoy visiting the farmers’ market, and also the reason I’m so excited about the new curated subscription tasting box from Hatchery. I love that each box comes with a tasting guide that includes recipe ideas, as well as a short bio on the people who make the products. The folks from Hatchery travel the country in search of great products to share, and their chefs taste everything sold in their online marketplace.

Having tasted all of the products in my first two boxes, I can vouch for the quality and flavor of everything I have received. And I can’t say enough good things about how Hatchery is supporting local food artisans by making their products more widely available.

It’s so fun trying all of the monthly samples and coming up with new recipes. My family–kids included–all love spicy food, so we were especially excited about this month’s box. My 9 year-old is a barbecue sauce fanatic, so I knew we’d have to do something special with the Causey’s BBQ sauce. I decided to combine it with a few other ingredients from my Hatchery box to create a sweet and spicy sauce for pork tenderloin.

This dish is so quick and easy–I had it on the table in less than 20 minutes. We eat a lot of pork tenderloin at our house, and this version was declared one of the best. The sweet and spicy flavors in the sauce were a perfect accompaniment to the pork. Everyone went back for seconds!

Sweet and Spicy Barbecue Pork Medallions

  1. Slice pork loin into 1 inch medallions. Season both sides of each pork medallion with spice rub and salt.
  2. Heat oil in a large skillet over medium-high heat.
  3. Meanwhile, combine the barbecue sauce, jam, balsamic vinegar, sugar, garlic and water in a small saucepan. Simmer over medium-low heat while you cook the pork.
  4. Add the pork medallions to the skillet and cook 5-6 minutes per side, or until pork is cooked through.
  5. Remove the pork to a serving plate, spoon the warm sauce over the top and serve.
