You may know that I'm mad for coconut. I just seriously love it so much. I blame the years I lived in Hawaii for my love. I guess you can really blame it on my parents, since we moved there for my dad's job in the Air Force. So, if you don't like coconut, blame it all on my parents.
My husband and I have taken trips to Mexico a few times and once to Belize and I'm always drawn to the coconut and pineapple that the ladies sell out of their carts.
