Avocado fries.


I saw this on Pinterest a while ago and put it down as one of the hundreds of recipes that I would one day make and forgot about it. Then, whilst watching Saturday kitchen, they were cooking with avocado and that was that. I knew today was the day. I love avocado – I love it on salad, I love it in pasta, I love it with chicken.. I just think it adds something great to a meal. One thing though that I’ve always struggled with, is eating it on it’s own. It just doesn’t have enough flavour for me to enjoy. I figured that cooking it this way would add something wonderful. It did. In the end. On Pinterest these are named as “Baked avocado fries” even though they are not baked at all and are deep fried. So I dropped the “baked”. Why advertise something as healthy when it actually isn’t at all? Seems nonsense to me. So therefore I deep fried them the way that I fry my chicken. Flour, then egg, then the main mix. Then oil. Keeps the avocado safe in this little protective cover and turns a wonderful golden brown. Mmm. I made them, and then remade them, and then again. I wanted this to be perfect and they just weren’t by following the recipe that was online. Me and my lunch guests were pretty disappointed. They tasted of nothing but crunch at first. So I blended the breadcrumbs with salt and crushed chillies, not only did this taste a WHOLE lot better but it gave way for the avocado to finally shine. The way it’s meant to. Once on the plate they were great. But lacking something. We dipped them in this incredible sauce we have in our flat which is a balsamic and truffle glaze. Good, but not quite what I as after.. And then finally, after nearly tearing my hair out in the kitchen, I just squeezed lemon juice over them. Perfect. Done. Ingredients Needed: 2 Avocados 2 eggs 2 cups breadcrumbs, infused with 2tbsp crushed chillies and 1tbsp salt. Plain flour Vegetable/Sunflower oil Method Pour a large amount of oil into a deep pan, you’ll need enough to cover the fries. Turn the heat on low/medium and wait until hot. (You’ll know when it’s hot enough by putting a tiny square of bread into the oil and if it turns into a crouton in less than 6 seconds, you’re there.) Whilst the oil is heating, slice your avocados. Then dip them first into the flour (make sure there is no excess), then into the beaten eggs, then into the mixture and set them aside until the oil is ready. Carefully place these strips into the oil and turn over every 10 seconds until golden brown. Take out and set onto kitchen towel to soak the excess oil. Put them onto a serving place and sprinkle with salt to taste and lemon juice. Eat.
