If you’ve been reading my blog for a while, you’re familiar with my weight loss journey over the past 2 1/2 years. If you’re new, here’s a quick rundown: 3 babies in 3.5 years hypothyroid diagnosis = 60 extra pounds hanging around. On Christmas Day, I finally reach my goal! A large part of reaching it has been eating healthy, unprocessed foods, with a big focus on fresh produce and nuts. One of my go-to snacks are Pistachios in the shell. The in-shell ones take more time to eat so it helps keep me feel full and keeps me from over-eating. The Pistachio Health Institute calls this the Pistachio Principle. Empty pistachio shells may serve as a “visual cue” of how many pistachios you’ve consumed, so don’t discard the shells after you’ve enjoyed the treat inside. I keep a bowl next to me to keep my shells in. It’s also just kinda fun. My kids come running when they hear me cracking shells! Pistachios aren’t known as the Skinny Nut™ without good reason. They’re one of the lowest calorie, lowest fat nuts and they offer more nuts per serving compared to most other snack nuts. Pistachios are also among the highest in protein and have 3g of fiber per ounce. I set up a little visual to show you a comparison:
