Quick & Easy Grasshopper Brownie Bites

What seems like a lifetime ago, I worked in a commercial real estate office and a co-worker brought in Grasshopper Brownies, which I had never tasted before. I have a love affair with chocolate & mint, nearly as much as chocolate & peanut butter. I found myself sneaking back over to the pan for more foolishness throughout the day.

A recipe for Grasshopper brownies is easy to find, but there are quite a few steps involved with the minty filling and smooth chocolate frosting. Here, I’ve used shortcuts to make a quick & easy version I’ll call Grasshopper Brownie Bites, which is still dreamy, chocolatey-minty, and you can whip these up quickly for a yummy St. Patrick’s Day treat.

Grasshopper Brownie Bites

Ingredients:

  • 1 package brownie mix, prepared as batter (I indulge with Ghirardelli Dark Chocolate)
  • 1 container Cool Whip, thawed
  • 1 jar fudge topping (I tried Smucker’s Simple Delight Hot Fudge Topping)
  • 3 Tbs Creme de Menthe (or non-alcoholic version)

Directions:

For brownie bites, you’ll use 2-3 non-stick mini muffin pans. I have three that hold 12 each, and one box of brownie mix makes 36 mini’s. Even though they’re non-stick, I still use Baker’s Secret (flour mixed in with non-stick spray) anytime I need to pop baked goods out of pans.

Scoop 1 Tbs brownie batter into each cup. Bake at temperature per package instructions; however decrease the time by about half as these will bake much faster than in a larger pan. For the Ghirardelli mix, I baked for 20 minutes.

Pop out the brownie bites and let cool on a wire rack.

Transfer fudge topping to a small bowl. Stir 1 Tbs. Creme de Menthe into fudge topping until smooth. Spread onto each brownie bite.

Carefully fold 2 Tbs. Creme de Menthe into thawed Cool Whip. For an easy way to top onto brownie bites, place a generous amount (a cup or more) into a sandwich-size bag. Squeeze gently until it goes down into one corner tip, then snip off 1/4″ from the tip. Squeeze gently onto brownie bites. If you’ve ever taken a cake decorating class then you can do this much prettier than I did, but it worked for me.

These Grasshopper Brownie Bites are a great treat for St. Patrick’s Day, and you can even dress them up with a sprinkle of green decorator’s sugar. Enjoy!
