These Funfetti Whoopie Pies are a party perfect dessert! They are simple, gorgeous, and delicious!

Oh my gosh, you guys.

Easter.

What is it with all the holidays? THEY JUST KEEP COMING. I’m like, can’t we just do Mother’s Day already? Do I have to keep buying you guys things? Aren’t you still eating the chocolates I bought you for Valentines Day? That was last week, correct?

Good grief. If I had a closet that wasn’t a complete disaster area, I’d go hide in one and take a nap. With a gossip magazine and a can of frosting, obvs.

One of my favorite Easter memories is of when Jon David was almost 7. There was a bunny that often hung out in our yard and because it was near Easter, I told him that it was the Easter bunny, keeping an eye on him.

I mean, I am never one to pass up an opportunity to pawn my parenting responsibilities off on an innocent animal.

Finally one day, Jon David came to me crying. “Mom, I KNOW THAT THE EASTER BUNNY ISN’T REAL.”

When I asked what on earth gave him that idea, he sobbed, “HOW CAN HE CARRY BASKETS IF HE DOESN’T HAVE ANY THUMBS?????”

I was busted. The jig was up. Poor guy, he’s too logical for his own darn good.

Funfetti Whoopie Pies

Prep Time: 20 minutes

Cook Time: 7 minutes

Yield: 15 servings

Ingredients

  • 1 box Pillsbury Spring Funfetti cake mix
  • 1/3 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 can Pillsbury Spring Funfetti frosting

Instructions

  1. Preheat oven to 400. Line a baking sheet with parchment paper.
  2. Mix cake mix, eggs, water and oil in a large mixing bowl on medium speed until fully combined. Drop batter using a small cookie scoop on prepared baking sheet and bake for about 6-8 minutes or until tops spring back when lightly touched.
  3. Remove to a wire baking sheet to cool.
  4. Once cookies are cooled, frost the flat part of half the cookies then top with another cookie.
