Recipe: Dried Blueberry Almond Chocolate Bark

One of our big resolutions this year is to eat better so I knew that our chocolate bar snacking addiction had to change. While we generally pick dark chocolate bars with at least 72% cacao, I wasn't a fan of the other additives and wanted to do better. I knew that Adrian was not one to cut out chocolate from his nightly snacking ritual so a few weeks ago I set out experimenting...

Now, I'm excited to finally share with you what I came up with! This is a recipe for dark chocolate bark filled with dried blueberries and topped with sliced almonds. These bark pieces have the wellness benefits of dark chocolate yet are sweetened with honey instead of sugars and are filled with delicious fruits and nuts too! Your taste buds will still get that taste of chocolate-y goodness yet you won't have to feel bad about this "better for you" indulgence!



You'll only need 4 basic ingredients for this recipe. Start with unsweetened chocolate baking bars at 100% cacao, Dove® Fruit Blueberries, sliced almonds, and honey.


Making this recipe is super easy and only takes a few minutes on the stove top. You'll want to melt the chocolate in a medium-size skillet pan over low, low heat until it's smooth and creamy. Then remove the pan from the heat and add in honey to sweeten up the chocolate (I use 4 tablespoons for a more bitter chocolate but you can go to 6 tablespoons or more depending on your preference!).


Next stir in the Dove® Fruit Blueberries! I love that these are made with real whole blueberries.


Line a baking sheet and pour in the mixture. With the back of a rubber spatula, spread out and flatten the chocolate until it's about 1/4" thick. Top with sliced almonds -- you'll want to do this quickly before the chocolate cools!
Place the baking sheet in the fridge and let it harden for the next 2 hours. Then you can break up or cut the sheet of chocolate into chunks and enjoy!




Feel free to experiment with this recipe! Dove® Fruit actually comes in 3 different fruit options including cranberries and cherries in addition to the blueberry that I've posted. I've personally also tried making this bark using cranberries with chopped walnuts and it's a great combination too!

Dried Blueberry Almond Dark Chocolate Bark

Ingredients (serves 4)
  • 8 oz. bittersweet chocolate, broken into pieces
  • 4-6 T honey (depending on desired sweetness)
  • 1/3 cup sliced almonds
  • 1/4 cup Dove Fruit Blueberries

Instructions Line a baking sheet with parchment paper. In a medium skillet pan over low heat, melt the chocolate, stirring occasionally, until the mixture is melted and smooth. Remove from the heat. Stir in the honey (use 4 T if you want a more bitter chocolate or go up to 6 if you want a sweeter dark chocolate). Stir in Dove Fruit Blueberries into the mixture. Using a heatproof rubber spatula, scrape the mixture onto the prepared baking sheet and spread out to a thickness of 1/4 inch. Refrigerate the chocolate bark until completely firm, about 2 hours. Break or cut into chunks. Store in an airtight container in the refrigerator for up to 1 month.
