Pinterest food finds

Nothing makes a quiet night in dissapear quicker than flicking through Pinterest, idly adding things to your boards and filling your head with plans of DIY, decorating your home and cooking up a storm in the kitchen. I'm forever pinning new ideas to try out in the kitchen and I thought I'd start a series sharing some of my favourites with you.

I've become a bit bored of steamed brocolli and spinach lately, so here are my top finds for some new, healthy ideas for vegetable sides!

ROASTED ASPARAGUS

With asparagus being in season in the UK, now is the perfect time to be trying out new recipes! This one keeps things simple with very few ingredients: asparagus, rosemary, lemon, olive oil and seasoning.

HARISSA MUSHROOM SKEWERS

As a self confessed mushroom obsessive, just the thought of these babies are making my mouth water. Serving them on skewers would be great for a tapas type meal, something I'm a big fan of when the Summer BBQ weather hits us. Filling a huge bowl with them will probably be more my style, though!

TOMATO AND BASIL ZUCCHINI

Zucchini, or courgette to most, is my one of my favourite vegetables to roast. The addition of roasted tomatoes and basil is one that would take little to no effort and can only make things taste even better! Why didn't I think of it myself?

HONEY PARMESAN ROASTED BRUSSELS

They get a lot of stick, and my family can often be seen trying to trade them off for an extra pig in a blanket at the Christmas dinner table, but I love brussel sprouts. Despite this, I've never done anything other than boil them up so this recipe has shot to the top of my list to try.

What are your favourite ways to spice up your vegetables?
