Skillet Kielbasa

I love one-pot dishes! And my Skillet Kielbasa is always a winner! You can pretty much add any vegetable medley you like. I usually go with the potato, green bean, and pepper trio. It gives you an excellent starch, vibrant color, and incredible flavor.

You can't really tell from this photo, but you get a really nice sauce from all the veggies, kielbasa, and broth as they cook down. I always serve this dish with a basket of warm garlic bread. Perfect for mopping up all the savory, saucy, goodness. Enjoy!

Ingredients: 1 Tbs butter or olive oil (optional) 1 1/2 LBS Smoked Kielbasa, sliced diagonally into 1/4" thick pieces 1 med onion, halved & quartered 2 to 4 Yukon Gold potatoes, halved & quartered 1 red bell pepper, thinly sliced 1/2 LB fresh green beans, trimmed 1 cup beef broth 1 TBS Worcestershire sauce 1 tsp minced garlic 1/2 tsp black pepper 1/2 tsp Italian seasoning
Directions: Heat olive oil or butter in a large skillet over med/ high heat. Add kielbasa, onion, and potatoes. Cook for about 5 to 8 minutes; or until you see some browning on the potatoes and kielbasa. Meanwhile, whisk beef broth, Worcestershire, garlic, pepper, and Italian seasoning, in a small bowl; set aside. Add green beans and bell pepper to skillet, stir to combine. Add broth mixture to skillet. Reduce heat to med/low. Cover with lid. Let cook for another 12 to 15 minutes; just until potatoes are fork tender. *If using a non-stick skillet, butter or oil may not be needed Serves 4
