The #ChoppedCanada Unexpected Ingredient

Are you one of those people who watches shows like Chopped Canada and thinks “That would be SO easy!”? Or are you someone who would freeze under the time constraints? I like to think of myself as flexible in the kitchen – I mean, teaching boys to cook real food in under an hour 2x a week teaches you to be nothing if not creative – but I think that under real pressure my mind might go blank….

Which is why, when KitchenAid Canada delivered this basket of goodies to my doorstep last month, I was relieved to see that even though they were issuing a cooking challenge where I needed to use all the ingredients, à la Chopped, there was no time constraint involved.

But still..

What would you make if you were given pancake and waffle mix, blueberry syrup, granola and coconut chocolate fudge bites?

Pancakes and waffles? Too obvious!

Looking at the ingredients on the pancake/ waffle mix, I realised that I could use this as I could all-purpose flour (it has baking powder and sugar added too so it’s quite useful!). And then I really got thinking….
