Homemade Hot Chocolate Mix - Lite




Hot Chocolate!
It's one of my favorite winter treats.
Unfortunately, most mixes and recipes are laden with sugar and I can't have that.
Sooo,
I came up with this recipe for myself and thought others might like it as well.
Of course, taste is important and I think the coconut palm sugar blends wonderfully, with the cocoa. Add a touch of salt to blend flavors and the cornstarch to make it creamy and thick.
Instead of using regular milk, I used almond milk which also cuts sugar and calories and has a wonderful taste and texture! Don't get me wrong. I have nothing against cow's milk but as a former cardiac nurse, I know how important every gram of sugar is for some folks.

I'm not a vegan expert, but I believe, if you use the suggested ingredients below, this is a vegan treat.
This recipe makes 1 1/2 cups of mix to store.
1 c coconut palm sugar 1/2 c unsweetened cocoa powder pinch of salt 1 t cornstarch
For Serving:
8 ounces of almond milk 2 T mix
1) Combine the sugar through cornstarch and sift through a strainer. Just add any extra coconut palm sugar granules that don't fit through the strainer back into the mix.
2) Store in an airtight container.
3) To make hot chocolate - Warm your milk in a microwave safe mug in the microwave. (About 1 minute)
4) Remove from the microwave and add at least 2 T mix and stir until completely combined.
5) If it is not quite hot enough, heat in the microwave a little longer.
