Serves: 9 servings
Ingredients
- 1 lb. sweet potatoes, peeled, cooked and mashed
- 1 tbsp. grated parmesan cheese
- 1 ½ cups 2% reduced fat milk
- 1 cup water
- 1 ½ tsp. kosher salt
- ½ tsp. fresh ground black pepper
- 1 cup ground cornmeal
- 2 egg yolks, at room temperature
- 2 tsp. baking powder
- ¼ tsp. dried sage
- 4 egg whites, at room temperature
Instructions
- Preheat oven to 325°.
- Spray a 2 quart baking dish with cooking spray. Coat sides with cheese.
- In a medium saucepan over medium heat, bring milk, water, salt and pepper to a simmer.
- Whisk in cornmeal. Continue to whisk and cook for a few minutes, until the mixture thickens.
- Turn off the heat and stir in mashed sweet potatoes, egg yolks, baking powder and sage. Let cool for 10 minutes.
- In the bowl of a stand mixer, beat egg whites until stiff peaks form.
- Stir in ⅓ of the egg whites into the sweet potato mixture.
- Gently fold in the remaining egg whites.
- Spoon into dish and bake for about 1 hour, or until puffed and golden.
