Lasagna Sandwich

My sleep pattern has been horrendous the last couple of days: I know it’s a combination of stress, anxiety, and excitement. So many emotions, man. I feel like my reliance on coffee perpetuates some of the problems too. In the back of my mind, I worry that my recent sleep problem may be much more severe than that; I’m always paranoid that SLE will show up in other ways since central nervous system issues have come up before. I’m very cautious about the activities and the things that I participate in (to a certain extent) because I have this tendency to think a bajillion steps ahead sometimes. Like, what if I break a bone and I’m given medicine or a procedure that messes everything up? Ugh. Sorry. I’ve probably annoyed a few of you with my paranoia. Moving on…

Look what I made myself for lunch today:

I’m not ashamed to share it because this thing is SO. CLASSY. It’s like a handheld casserole with the gooey cheese and marinara sauce. If you drip or spill on yourself, it’s evidence of how you survived (some mild burning sensations from the hot cheese on your hand), conquered, and won lunch.

For 1 sandwich:

  • 2 slices of bread
  • 1 tbsp. ricotta
  • 1 oz. sliced mozzarella cheese
  • 1 1/2 tbsp. marinara sauce
  • 4 Roma tomato slices
  • freshly ground black pepper
  • 1 tbsp. olive oil

Spread ricotta on one slice. Top with mozzarella, marinara, tomato slices, and a pinch of black pepper; top with remaining slice of bread. In a small skillet, heat tablespoon of olive oil over medium heat. Transfer sandwich to pan and cook, about 1 minutes or until the bread is golden brown. Flip and cook the other side until it is also golden brown.
