Chicken Cacciatore for Man Food Mondays

Good Morning! I know your wondering why Chicken Cacciatore for Man Food Mondays….well, it all started with a cartoon. No really it was a cartoon I watched as a child on Sunday mornings. One of my favorite cartoons was one about a highly intelligent dog and his adopted son, Mr Peabody and Sherman Improbable Histories. While these are TOTALLY politically incorrect in these days and times, the Peabody puns at the end were golden for a kid of 7 or 8. The pun that has stuck with me over the years was

“Sherman, are you familiar with the heroic rooster who foiled the plans of and apprehended British Loyalists?” “Jeepers Mister Peabody, I have never heard of such a thing” “What! Sherman!?! You’ve never heard of chicken Catch a Tory?”

So, here’s the Chicken Cacciatore recipe that came as a result of my obsession.:)


Chicken Cacciatore for Man Food Mondays

Ingredients
  • 2 lbs skinless boneless chicken thighs or 14 oz extra firm tofu, drained and sliced
  • 3 tablespoons light olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 yellow bell pepper, sliced and divided
  • 1 green bell pepper, sliced and divided
  • 2 28 ounce cans of whole tomatoes Cut the tomatoes in half before you add to the pot.
  • 1 14 ounce can of tomato puree
  • 1 tablespoon fresh rosemary
  • 1 tablespoon dried oregano
  • 1 cup dark red wine
  • Salt and fresh ground pepper to taste
  • 1 package whole wheat no yolk flat noodles

Instructions
  1. In a heavy dutch oven type pot add 2 tablespoons of the olive oil and heat over medium high heat.
  2. Salt and pepper the chicken thighs and add them in batches so as to not crowd the pot. Cook each batch for 5 minutes on each side.
  3. Remove the chicken thighs to a patter and set a side. Add the chopped onions to the pot and saute till almost translucent.
  4. Add in ½ the yellow and green bell peppers and saute for 5 minutes more.
  5. Add the garlic and saute 2 minutes.
  6. Return the chicken thighs to the pot on top of the onions, garlic and peppers. rRduce the heat to low.
  7. Add the whole tomatoes to the pot, cut the tomatoes in half as you add them. Add the tomato puree, the rosemary and the oregano and dark red wine, simmer for 1 hour covered.
  8. Add the remaining bell peppers and simmer uncovered on medium low for another 15 to 20 minutes.
  9. Cook the noodles per package instructions.
  10. Serve Chicken Cacciatore over the noodles.

The nutrition information below is based on the recipe using chicken. It is for the chicken cacciatore alone and does not include the noodles. It also does not include the salt and pepper, since they are to taste.

Some of you may remember that we have particular kids here at home. One, my step son, is currently a vegetarian the other, my stepdaughter, is particular about whats she eats. My stepdaughter ate this! And, what’s more said she liked it and would eat it again! WOW, so I am taking that has to mean it was good. I prepared this in a vegan version for my stepson and got pretty much the same response. What’s more Michelle, who was skeptical, really enjoyed it and stashed some away to have for lunch tomorrow…..SCORE.

A couple of notes about the prep:

For the red wine I used Menage a Trois Midnight but you can used any darker red wine if you want. Some recipes out there call for a heavy white wine, so if your partial to that use it instead.

For the vegan version I made for my stepson I just substituted the extra firm tofu for the chicken, frying it in the extra light olive oil then followed all the steps for the other recipe. This was made in a different pot, with different utensils, so that it did not come in contact with any meat products.

I served this with a salad and the rest of the Menage a Trois Midnight . It was a very enjoyable and filling meal.
