What’s for Dinner?

It’s race week! The countdown to Friday morning has begun.

I still can’t believe I’m going to Hawaii in 5 days. Oh and running the Honolulu Marathon. I’m sure you are sick of me saying that, but I have to keep reminding myself that this is really happening. It’s not a dream. It’s FOR REAL.

This is a short week of figuring out what’s for dinner. Of course, it’s also a crazy, busy week right up till when we get on the plane. So I’m keeping it simple and light.

Sunday: Birthday party

Monday: Sockeye Salmon roasted Brussels sprouts

Tuesday: Butternut Squash Apple Soup Black Bean Quesadilla

Wednesday: Grilled Chicken Salads

Thursday: Ron’s birthday dinner – his choice

Friday: Hawaii

Saturday: Hawaii
