{What You Need} 1 lb. package of smoked Turkey Sausage
(pre-cooked meat...a working mom's best friend!) 1/2 chopped onion 20 oz. package cheese tortellini, refrigerated or frozen 2 14 oz. cans of diced tomatoes in juice 1 14 oz. can of chicken broth 4 oz. cream cheese 1 package fresh spinich salt and pepper to taste
{What You Do} *Slice the turkey sausage and sauté it, along with the onions, in olive oil until browned.
*Add tomatoes, chicken broth, and tortellini. Bring to boil, stirring often.
*Add spinach, cover and simmer on low until pasta cooks to al dente.
(About 15 minutes, or until you finish a glass of wine...it was a busy day, remember?)
*Turn off the heat and add cream cheese. Recover and let sit for 10 minutes before stirring.
*Serve hot with a big crusty bread, and watch the dish disappear!
