I hear there is this big game this coming weekend. I think it’s the game where they ride horses around and hit a ball with a stick…haha just kidding!!

Super bowl Sunday is this weekend and that means hours and hours of football. My mind is going numb just thinking about it. Don’t get me wrong! I love a good game, but I’m just not so much into watching sports as I am in playing them.

Seriously, I’m there just for the food table. Just lead me to a table full of snacks and treats, and I will be happy for hours. Well, until the food runs out. I better make extra, so that doesn’t happen.

This week I have quite a few projects that I have to finish and have done. So, what do I decide to do?

Make a football treat instead, of course!

Was this one of the projects that NEEDED to be done? Heck no! But when I get an idea in my head, I just can’t rest until I see it through. I wish I had that kind of attitude when it came to cleaning my house. Sadly, since I have started working full time, the cleaning has slacked off quite a bit. Thank goodness for older children who can help out on the weekends, right?

Anyway, I realized that after 6 years of blogging, I only have one football treat on this blog…and it isn’t even a sweet treat. I made football chips to go with this Guacamole Hummus. That was 3 years ago! Three years, people! What in the world have I been doing every February? Apparently I was more concerned with making sure you had Red Velvet Cheesecake Brownies and Red Hot Oreo Fudge. Both of which, you should totally try by the way.

Actually, over the years I have developed the attitude that I make and share whatever the heck I feel like making. I don’t follow any rules or schedules on what I should post and when. Well, maybe I do a little. But for the most part, I make the fun and crazy things that are swirling in my head at the moment. So until now, football food wasn’t a priority. That was about to change…

The other night I decided right then and there that a cute football treat just had to happen. Forget the projects and dead lines! Well, forget them for one more night anyway.

Now I have to admit that I absolutely go nuts for cute themed food. I puffy heart love it! And if I post a cute food you can bet your bootstraps that it’s going to taste good too. No cute boring food here!

I dug through the baking cupboard and emerged with mint Oreo cookies, Andes mint chips, marshmallows, and Rice Krispie cereal. The lightbulb went off immediately! It has been way too long since the last rice krispie treat, so football rice krispie treats it is!!!

Since I already had a fridge full of cupcakes and a cookie jar full of cookies, I decided to make a small pan of krispie treats. Let’s just say I should have made the big pan. The cupcakes and cookies are still here…but the football krispies disappeared in record time.

My youngest son is quite the picky sweets eater. Remember he is the one that gave me grief for adding extras to these Homemade Chocolate Chip Brownies? (Which by the way is another one you should really try.) Anyway, he absolutely LOVED these treats. I caught him in the dining room sneaking a few extra ones in the dark Then when he realized that his sister ate the last few after school, he wanted to know when I could make another batch.

Score!!! This sweet football is a definitely touch down treat!!!

Mint Cookies and Cream Football Rice Krispie Treats

Prep Time: 20 minutes

Yield: 12 rice krispie treats

Mint cookies, a mint chocolate topping, and a fun football shape make these rice krispie treats a game winning snack.

Ingredients

2 Tablespoons butter 3 cups miniature marshmallows 2 1/2 cups Rice Krispie cereal 1 cup crushed mint Oreo cookies 1/2 cup Andes mint chips 1 1/2 teaspoons shortening, divided 1/4 cup white chocolate chips

Instructions

  1. Place the butter and marshmallows in a large saucepan. Heat over low-medium heat until melted.
  2. Stir in the cereal until completely mixed. Add the cookie crumbs and stir in. Press firmly into a buttered 8x8 dish. Let cool completely.
  3. Use a football shaped cookie cutter to cut 12 footballs out. (For the last one, you may have to press a few of the scraps together.)
  4. Place the Andes mint chips and 1 teaspoon shortening in a microwave safe bowl. Heat for 1 minute. Stir until melted. Dip the tops of each football in the melted chocolate. Let set.
  5. Place the white chips and 1/2 teaspoon shortening in another bowl. Heat for 1 minute. Stir until melted. Let cool slightly. Spoon into a small plastic bag and cut a small tip off. Pipe laces onto each football. Let set. Store in a sealed container on the counter.
