Thin Mint Latte

Adding cookie crumbles to the rim of your glass isn’t necessary, but it sure does make this Thin Mint Latte more fun to drink, especially on a Monday.

So this weekend we had a huge winter storm roll through and dump about 12 inches on our town. I guess just because it is now March, that we shouldn’t rule winter out just yet. I just keep thinking that spring has to be coming, but then it gets cold and snowy again. That ground hog really was right about a few more long weeks of winter staying with us!

Thank goodness for a warm homemade latte to keep me warm as I watched the snow fall all day long. The good thing about making these coffee drinks at home is that I do not have to go anywhere with that much snow on the roads. Plus, not spending $5 on one drink is always a pretty motivating factor to continuing to make them at home too.

With a certain cookie season in full swing, I decided to add those flavors to my latte. The chocolate and mint added such a great flavor to the coffee.

After the third cup, I decided to get fun with the presentation. A cup of coffee with cookie crumbles on the rim and on top, plus Cool Whip and chocolate drizzles looks and tastes pretty amazing.

The cookie crumbs are totally optional…but I think you should totally try it. 1. It’s so fun. 2. Seriously, it makes the coffee taste that much better. Trust me…I had a few different versions. The rim of cookie was the best.

Use your finger to add a small bead of honey all around the rim of your glass. Then dip the top of it in cookie crumbles.

Make a cup of coffee and pour it into a measuring cup.

Then heat the milk, syrup, and extract on the stove until right before it boils. I bought this Aerolatte Milk Frother

a few months ago, and it is my new favorite kitchen toy. I hope you are prepared for quite a few fun latte flavors. (You can also pulse the hot milk in a blender to get it frothy.)

Another thing I learned in making a drink with a fun dipped rim is that you need to have the steamed milk and coffee in a container that can pour easily. Let’s just say the very first one I poured the coffee in from a regular coffee cup, and the coffee went all over the sides of my cup. Bye, bye fun rim of cookie!

I have two of these angled measuring cups

and they work great for pouring the coffee and frothed milk into any mug without spilling. Another quick tip is to use the back of a spoon to keep all the foam from going into the cup if it is smaller. If your mug is large, then you can pour everything in right away.

Now if I were you, I would go find a box of Thin Mints. Crumble 1 cookie to dip your coffee cup in, then enjoy a few more while you sip your Thin Mint Latte. I’m confident that you will be making this one over and over again. How do I know? Because I had 4 in 4 days…yup, they are that good.

Thin Mint Latte

Prep Time: 10 minutes

Yield: 1 drink

This homemade latte has plenty of mint and chocolate flavor. The rim of cookie crumbs makes it feel so fancy and taste amazing.

Ingredients

honey 2 Tablespoons mint chocolate cookie crumbs 1/2 cup strong brewed coffee 1 cup fat free milk 3 Tablespoons chocolate syrup extra 1/4 teaspoon mint extract Cool Whip green sanding sugar

Instructions

  1. Use your finger to spread a thin layer of honey around the rim of the cup. Dip in crushed cookies. Set aside.
  2. Brew the coffee and set aside.
  3. Stir the chocolate syrup and mint extract into the milk. Bring the milk to almost boiling and remove from the stove. Use a blender of frothing tool to create a generous foam. Pour the steamed milk and coffee into a large mug. Top with desired amount of foam, Cool Whip, syrup, cookie crumbles, and green sugar. Serve immediately. Makes 1.
