Green Tomato Challenge: Green Tomato Pesto Sauce



As I wanted to get to tackling this heap of green tomatoes as soon as possible, I selected the 'bad' ones to cook for lunch right after harvest. 18 tomatoes have been used for this pesto sauce; 90 were left to ventilate.


A quick blitz with an onion and a little warming up in the pan with olive oil... My first green tomato pesto.
