Sunday Food Prep Inspiration 94

Hi friends!

No food prep for me last week but here are some readers with inspiration for you!

This week is my last week before Christmas break at the school where I teach, and since I have our holiday party in mind on Friday, I thought I’d keep it light during the week. I find that if I prep healthy food before the craziness of the week sets in, I’m 99% more likely to eat more fruits and veggies…I’m sure you find the same thing, too. Otherwise, I just reach for peanut butter… Today I prepped:
  • Chopped red and orange bell pepper; drained and rinsed black beans (in the container with the red lid); rinsed and chopped mushrooms; drained and cubed tofu, all for a stir fry I plan on repeating this week. I’ll dump this in a pan with chili powder and throw it over a bed of baby kale and top with salsa.
  • Frozen bananas for green smoothies (this times three!).
  • More sliced bell pepper– orange this time– in big pieces for dipping in hummus (in to-go packets, seen in front).
  • Sweets: a mini batch of my adaptation of Angela’s breakfast cookies from Oh She Glows– I dumped a quarter cup of chocolate chips in there, but the base is still just raw oats, banana and cinnamon. I even went so far as to break up an organic TJ’s dark chocolate bar for easy access.

Here is my Sunday prep with
– Two salads in Jars (another fantastic idea from USA)
– Shepherds pie with sweet potato topping
– Chopped carrots and orange for snacks
– Chopped carrots and cucumber with hommus for snacks
– two breakfast wraps
– Barley
– Chicken breast that has been poached
– Brown rice
– Chicken casserole

Faith at The Conscientious Eater

My husband and I are going out of town for Christmas vacation, but right when we get home we’ll be hosting my sister and brother-in-law. I wanted to prep some bread items that I could freeze while we’re gone and then thaw out or pop in the toaster when needed once we got home. I made my Whole Wheat Sandwich Bread, Whole Wheat Tortillas and Cinnamon Raisin English Muffins. I slice the bread and english muffins before freezing so that they’re easy to toast. I also cut up a pineapple and made some un-pictured granola.

I actually did some Christmas food prep as well yesterday- I made Minimalist Baker’s veggie meatballs for my sister and I on Christmas Eve. Also made two batches of oatmeal chocolate chip cookies…they’re an adaptation of the Oh She Glows breakfast cookies…one with mixed peanut butter and chocolate chips, and one with m&ms.
