I’m still on my baking kick, I think it’s helping. My friend, milking the fact that he’s not very well, asked me to bake a chocolate cake. I decided to make some of these muffins instead but they seem to have gone down just as well.
Step 1. Serve the flour, cocoa, baking powder, and cinnamon into a bowl.
Step 2. Stir in the sugar and chocolate chips.
Step 3. In a separate bowl whisk together the sunflower oil and the eggs, then gradually stir in the milk.
Step 4. Add the liquid into the dry ingredients and stir until fully absorbed.
Step 5. Spoon the mixture into a greased twelve-hole muffin tray.
Step 6. Bake for twenty minutes in an oven preheated to 200C/425F/Gas Mark 7.
Step 7. Remove from the oven and leave to cool for a few minutes before serving or storing.
Tip: they taste great with a dollop of double or clotted cream.
