Mushroom and White Wine Risotto with What To Cook Tonight









One of my very close friends, Sophie, recently launched What To Cook Tonight with her Dad, Andrew. This incredible father-daughter duo is based out of Sydney, Australia and cook up the most delicious recipes from their home kitchen. They provide you with these beautifully photographed recipes in a weekly cookbook that can be purchased directly from their website. Their mission is to solve the constant question, "what do I cook tonight?" I really love that every cookbook comes with a shopping list so you know exactly what to go get at the grocery store.

I remember sitting on my couch in Scotland during the weekend of our wedding, chatting with Sophie about this idea of WTCT. She was still living in London, but knew eventually she would be heading back to Sydney with her now fiance, George. She told me all about how her dad is this sensational cook, and how every time she would visit home they would spend their time in the kitchen making meals and then throwing dinner parties for their friends and family. She knew that they could help people feel inspired about food and cooking. When she finally returned to Sydney, they hit the ground running and worked countless hours building their site, cooking (Andrew) and photographing (Sophie) over 200 recipes for their 2014 launch. I am just so proud of Sophie for making her dream a reality.

Sophie and Andrew have been kind enough to let me share some recipes from their weekly cookbooks here on MKG. I really hope you enjoy them as much as I do.
