Quick and Easy Healthy Recipes

So, it is no surprise to anyone who actually knows me that I am NOT a fan of cooking. Ok, let me take that back. If it isn't something with chocolate, peanut butter or sweet then you won't typically find me super excited to prepare it. However, over the last 1.5 months I have really been focusing on eating right and getting rid of this baby weight for good! Not to mention the benefits of having my children (and yes hubby too) eat better. Since I know I'm not alone in this boat (the I don't like to cook, I don't have time to cook, I don't know what to cook boat) I decided to share 14 of my taste tested and family approved recipes! I do not in any way shape or form take credit for any of these recipes. I am merely sharing the wealth with what I have found works (and quite easily I may add) for my family. I'd love it if you would post your favorite recipes or links to them down below. Keep in mind these should be healthy recipes (or at least healthyish).

Healthy recipe ideas

1. Salsa cx wrap in lettuce or whole grain tortillas. Also makes a great topping for salad! Serve with brown rice.

3. Italian marinated cx (take chicken breasts and marinate in italian dressing then grill and serve with your favorite veggies)

4. Pasta e fagioli serve with a salad

5. Baked Taco Chicken serve with brown rice and a sald.

6. Chicken Stuffed peppers serve with a salad.

7. Mexican stuffed peppers (remove top from pepper and empty seeds, brown 1.5 lbs of lean hamburger or turkey, add water and taco seasoning and simmer. Add diced tomatoes to meat. Fill peppers with mixture. Bake at 350 for about 30 min. Remove and add a little cheese. Bake for 15 more minutes or until peppers are done.) Serve with a salad.

8. Zucchini boats serve with wild rice or a salad.

9. Zucchini pizza (slice zucchini in to thin strips. Top with favorite pizza sauce and toppings plus a little cheese – add the last 5 minutes or so. Bake at 350 for about 25 minutes). Serve with a salad.

10. Zucchini spaghetti (Cut zucchini in to small strips, sauté in a pan until done, add your favorite spaghetti meat sauce to the top) serve with a salad.

11. Spaghetti squash (Punch holes all aroud, put in microwave for about 10 minutes or until soft. Top with your favorite light alfredo sauce, broccoli and chicken or even your favorite spaghetti sauce. I have even lots of ways to “spice up” spaghetti squash so go to pinterest or google for inspiration! Serve with a salad.

12. Skinny cx parm (I added a can of stewed tomatoes and spinach for a little something extra)

13. Parmesesan crusted tilapiaStuffed chicken (I typically stuff with a little low fat mozzarella cheese and either spinach or asparagus. There are many variations. Google is my friend!)

14. Eggplant parmesean serve with a salad.
