Ice Cream Sundae

Yes, that’s right… this happened. I take my ice cream very seriously, and when the summer time hits all that seems to be on my mind is ice cream, ice cream and more ice cream. It’s an issue. After buying a large amount of cherries and strawberries at the market the other day, I decided to put half aside and try whipping up my own sundae sauce to make our ice cream night even classier. As I was impatiently waiting for the sauce to cool down, I spotted some apricots in the kitchen and thought, “Hey, why not roast them with some honey and add them as my cherry on top?” My brain works in the strangest way sometimes, but no complaints since this turned out to be the most heavenly treat. This isn’t a child’s cheap, sugary sundae… it’s classy, gorgeous and better than anything you have ever tried. Grown up ice cream sundae is the only way to go.

Adult Ice Cream Sundae

1 pint of your favourite vanilla ice cream

Strawberry Cherry Sauce:

1 cup cherries (pitted and cut in half)
1 cup strawberries (hulled and sliced)
1/4 cup sugar
1/4 cup water
Juice of one whole lemon

Combine all the ingredients in a small pot over medium heat. Bring to a boil and cook over medium low heat for 20-30 minutes. Remove from heat and let cool.

Roasted Apricots

6 Apricots
1 1/2 teaspoons honey
Pinch of cinnamon
Pit and cut apricots in half, with inside facing up drizzle honey and sprinkle cinnamon. Roast in a 425 degree oven for 10-15 minutes. Let cool.

Assemble your sundae however you like…there are no rules to this!
