Recipe: Perfect French Toast

Is there anything better than waking up to the waft of fresh, crispy French Toast on the weekend? We think not...

What You Need:

  • 2 Large eggs
  • 3 Tsps vanilla extract
  • 2 Slices of white bread (Day old Farmhouse Loaf is our pick.)
  • 1 Tbsp caster sugar
  • 1 Drop vegetable oil (for frying)
  • 1 Knob butter for frying

Step One
In a wide, shallow bowl, use a fork to whisk the vanilla extract and caster sugar in with the eggs.

Step Two
Soak the bread in the mixture, try and leave it to soak for just under a minute each side.

Step Three
Put a non stick pan over a medium heat and add the oil and butter. Once the butter has melted and is starting to sizzle, carefully place the soaked bread in the pan (carefully because that eggy-mixture laden bread now has the same structural integrity as an overly dunked digestive biscuit!) Fry until golden brown on both sides, it gives off the most wonderful smell, just like freshly made doughnuts.

Step Four
Get creative with your toppings! We like to sprinkle ours with icing sugar and serve with blueberries, raspberries and sometimes maple syrup, but the possibilities are endless. You could try chopped banana and honey, strawberries and hot fudge sauce or poached apple slices and cinnamon.

A dollop of real creamy vanilla ice-cream placed over a still warm slice so it starts to melt sprinkled with candied pecans is also sinfully delicious... Oh Lord... we're dribbling...
