Food Junkie: Cold Potato Salad with Spring Onions and Bacon


Spring is here and summer is already behind the corner. I don't know about you ladies but I'm not too comfortable drinking or eating anything warm during the summer, especially if it's the Indian summer kind of thing. Needless to say I always end up looking for some new cold lunch/dinner options in the spring time, preparing for the summer.

Today I'm sharing you guys a recipe for a cold potato salad. It is a variation of a recipe I learned from Oi Mutsi Mutsi which is a Finnish blog. Needless to say the Finnish recipe won't do you any good, so I tried my best to translate it in English. ;) Let me know if there are errors in the recipe, this is my first time writing one in English!

This is an easy recipe to modify with your own liking. You can replace the bacon with something else if you are a vegetarian or leave it out completely, the salad will taste just as good without the bacon.


Ingredients:
6 big potatoes
1 cup of bacon
1 cup of feta or salad cheese
0,5 cup of spring onions, chopped

Dressing:
1 cup of crème fraîche
salt, black pepper, sugar and mustard to your own liking

Boil the potatoes in plain water with no salt added, and fry the bacon on a skillet or in the oven. Drain the cheese. While waiting for the potatoes and bacon to cool down, prepare the dressing. Mix créme fraîche and the seasoning in a big bowl, check the taste but be careful with the salt at this stage, as cheese and bacon will add to it. When cooled down, cut the potatoes into small pieces, crumble the bacon and chop the spring onions. Add all ingredients to the bowl with the dressing and mix it up.

Let the salad set in the fridge over night to make the tastes pop. If you are impatient, the salad is good to eat right away... But I do guarantee it will taste better if you let it sit for a while. ;)
