GLOBAL FEASTS: BELGIUM CONTINUES! Remember those beer marinated fries? Those delicious baked potatoes were served with fresh caught Pacific Northwest mussels. mmmmmm….. moulles frites! An absolute highlight of our Belgian feast. Steamed in Belgian wheat ale, butter, and herbs. YESSSS!

You know, even though I’ve been living in the Pacific Northwest all my life, I was still undecided about mussels. Oysters, yes. Clams, yes. Geoducks? Hmmm…..

Mussels though…… I had just never really realized how great they were. THEY ARE AMAZING! Like large, more mild clams. Little bitches to clean (beards? say what?), but totally awesome little shellfish.

One of the guests was a 2 year old. That little tyke fell in L-O-V-E with them! He ate more that I did! Pretty radical.

So here’s the thing about moulles frites………. you guys……

It’s mussels AND FRIES! Awesome shellfish AND FRIES! Delicious buttery seafood AND BEER MARINATED FRIES! And thyme mayonnaise. Can’t forget ’bout that.

Those Belgians are freakin geniuses.

Belgian moulles frites recipe! Easy, buttery mussels steamed in beer served with crispy beer marinated french fries!
Serves: 4 servings
Ingredients
  • 2 Tablespoons butter
  • 1 Tablespoon minced shallot
  • 1 teaspoon chopped fresh thyme
  • 12 oz Belgian wheat ale (I used Blue Moon)
  • 2 lbs live fresh mussels, debearded and scrubbed
  • Beer marinated fries with thyme mayonnaise*

Instructions
  1. Melt butter in a large skillet over medium heat. Add shallot and thyme and saute about 2 minutes. Add beer and bring to a simmer.
  2. Keeping a large bowl handy, add mussels to skillet and cook until they open, pulling them out one by one as they open up and placing them in the bowl.
  3. If they do not open, discard.
  4. When all are cooked or discarded, pour cooking liquid into bowl with mussels and serve with beer marinated fries with thyme mayonnaise.*
