Meatless Monday – What I Ate 1

Hello! I really wanted to bring back Meatless Mondays this year but have been lazy about it. I think plant based diets are very healthy. So, I’d like to start making every Monday vegetarian and focus on vegetables and fruits and grains and beans in my diet one day a week.

I think this is an extra good idea because my weekend eats are usually full of sugar and fried food and pizza. Hey, I enjoy every minute of it but it’s nice to get back on track!

So after my run this morning I made my usual egg-centric breakfast.

Mid-morning I busted out these new Chobani flavoris – Chocolate Haze Craze and Salted Caramel Crunch!! I had the salted caramel first and intended to save the chocolate one for tomorrow. Yeah right. I ate that one in the afternoon.

Lunch was a massive salad with beans and more eggs.

I was super productive today and in between emails washed the sheets and bed spread because Vegas barked on it (just a tiny bit on the edge, but still I am upset with him).

Free cat to a good home. His name is Vegas, but he doesn’t respond to anything but deli turkey meat.

Dinner was a simple – I just made mini pizzas on bagel thins that I have. No pictures because my hands were covered in sauce.

Dessert was Arctic Zero with chopped nuts and a little dry oatmeal for crunch and chew.
