Coconut oil cranberry orange scones



I've developed a mild obsession with coconut oil. I use it for everything from beauty to cooking because it's just so good for you. I have a post planned for later that will detail my coconut oil obsession, but for now I wanted to share this delicious (and mostly healthy) scone recipe that I came up with using a standard scone recipe as the template. I subbed out some ingredients that aren't healthy choices (think white flour, butter and cream) for a few healthy alternatives to make this pastry a little less guilty.
Ingredients: 2 cups stone ground whole wheat flour 1/3 cup sugar 1 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1/2 cup coconut oil 1/2 cup plain greek yogurt (unsweetened) 1 egg dried cranberries & orange zest to taste
Directions: (adapted from All Recipes) 1|| preheat oven to 400 degrees, placing oven rack in middle position
2|| in large bowl mix flour, sugar, baking powder, baking soda and salt. Add solid coconut oil and knead using hands until dry ingredients become slightly wet and resemble chunky course meal. Set aside. ** note on coconut oil: it's a solid at room temperature, but as soon as you measure it out, add it to the dry mixture and begin massaging with hands, it will liquify (the melting point of coconut oil is about body temperature). No need to melt coconut oil prior to adding due to this.
3|| in small bowl whisk together egg and greek yogurt.
4|| add egg and greek yogurt mixture to flour mixture. Mix together using your hands in a kneading fashion. There may not seem to be enough liquid to create the dough, but keep pressing mixture into a ball and kneading. It will eventually come together.
5|| add dried cranberries and orange zest to mixture. Combine using hands. I used a fresh orange and vegetable peeler for the orange zest.
6|| Form dough into a ball and transfer to a cookie sheet that's lined with parchment paper. Pat ball into a flat circle that's about 3/4 inch thick. Using sharp knife, cut dough into 8 triangles and separate pieces about 1 inch (this is important, otherwise inside of scones won't completely bake).
7|| dust with sugar and bake until golden brown, about 15 to 18 minutes.
