Go Bananas for Muffins!



Happy Friday everyone! Here is a quick muffin recipe to get your weekend started! For all my fellow muffin lovers who also love a good banana bread, these little goodies are going to hit that banana craving right on the money. Packed with banana flavour and topped with a crumble mixture, you'll find it hard to stop at just eating one!

Let's get to it!

Batter Ingredients
1 large egg, lightly beaten
3 large ripe bananas, mashed (I use overripe bananas that I've tossed into the freezer)
1/4 cup butter, melted
1/4 cup unsweetened apple sauce
1 1/2 cups all purpose flour
1/2 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract

Topping Ingredients
3 Tbsp melted butter
1/3 cup brown sugar
1 1/2 Tbsp all-purpose flour
1/2 cup rapid cooking oats

Method
1. Combine all the 'Topping' ingredients together in a small bowl and set aside.
2. In a large mixing bowl, thoroughly mix the egg, banana, apple sauce, vanilla and melted butter.
3. In a smaller bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon, stirring to combine.
4. Add the flour mixture to the banana mixture, stirring just until incorporated. Do not over mix.
5. Spoon batter into prepared muffin tins (use liners or grease tins and dust with flour).
6. Top each muffin with the oat / sugar mixture. You can be generous, there should be plenty for each muffin.
7. Bake in a preheated, 400F oven for 18-20 minutes, or until toothpick comes out clean. Remove muffins to cooling rack and enjoy!

*This recipe should yield 12 muffins, however it will depend on how large the bananas were.
