Homemade Acai Bowl Recipe

Acai bowls are a big trend these days and it wasn’t until I got pregnant that I decided to give them a try. The reason: I have been working on eliminating dairy {to an extent} and an acai bowl seemed like a natural transition from my greek yogurt parfait. What are they? The best way I can describe them is an edible smoothie, loaded with your favorite toppings. Here’s what you need:

Ingredients

Frozen Acai. This is sold in individual servings in the frozen section of a speciality food store! I use these Sambazon packs.
1/4 cup Coconut Milk or Almond Milk {use sparingly, you want the consistency to be more edible than a smoothie}
1 Banana
Toppings of your choice! I use shredded coconut, my favorite granola, banana, and strawberries but you could use flax powder, almonds, dried acai berries, carob chips, etc.

What to do

Blend frozen acai packet, 1/4 cup milk and banana until roughly smooth. I use a magic bullet since it’s easier with a single serving but you definitely want to make sure the consistency is thick enough to eat with a spoon. {Tip: Use a frozen banana!} Pour into your favorite bowl and top with the toppings of your choice. Enjoy!
