Italian Baked Eggs


A few months ago I had the opportunity to attend Shift Conference in California. ShiftCon is the very first international social media conference focusing on wellness, health, and the environment. It was such an amazing, overwhelming experience. I’ve attended several different conferences in the past that focused mainly on blogging, where I knew a lot of the people attending from social media, but this was the first time I went all alone without knowing anyone that might be there.

I was really excited to attend this conference and soak up as much information as I could. While we don’t eat a strictly GMO-free or organic diet, we’ve definitely been making shifts towards this in the past year. I’ve been reading and watching anything I can get my hands on about food and food policy, and it has been eye opening to say the least. It’s amazing how many of us don’t stop and ask “how did this food get to my plate?” It was really interesting to be in a room with people who have been asking these hard questions for decades, and are finally starting to see some answers.

I would have to say my favorite part was listening to keynote speaker Robyn O’Brien. She was so passionate about this movement and made you feel like you weren’t just one tiny voice asking questions. The food was delicious- probably my second favorite part- everything we ate was GMO free. The conference wasn’t just centered around food and food topics though- it also covered environmental concerns, household and personal care toxins, and sustainability.

I left the conference completely exhausted and overwhelmed with so much information. It’s really taken me this long to even process it to start to write about it. Like I said, we have been making slow and small changes in our family, and I’d like to share those on the blog as we go. Most of the attendees were a lot farther down this path than I am, but it’s nice to have trail blazers ahead of me as I decide what’s the best course for my family. I can’t say I intend to be 100% GMO-free or organic at this point in time, but I love researching and getting more information about these topics.

Attending this conference did make me more grateful to work with brands that do care more about consumers and about the environment, like Great Day Farms, a member of CCF Brands. Happy chickens make happy eggs, and happy eggs make amazing dishes like these Italian Baked Eggs. I made Creamy Baked Eggs for the first time a few weeks ago and fell in love. I love baking eggs in the oven because it’s so easy, and results a perfect egg that you didn’t have to babysit on the stove. I’ve always been a huge fan of breakfast, but with all this cold, dreary weather we’ve been having here in Texas lately, I find myself craving a warm, comforting breakfast all the more. I do love sweets in the morning (like my Breakfast Cheesecake or French Toast Casserole) but I like to switch it up with something more savory every once in awhile.

This recipe is almost the basis of my Creamy Lasagna- which uses egg and milk instead of ricotta and results in perfectly creamy, cheesy layers. I chose to eat mine with some crusty french bread dippers, but it’s just as a good with a fork.

Italian Baked Eggs

Ingredients
  • 1 cup marinara sauce
  • 4 Great Day Farms eggs
  • ¼ cup milk
  • ¼ cup shredded gruyere or mozzarella cheese
  • 2 tbsps grated Parmesan
  • Salt and pepper, to taste
  • Italian seasoning or dried basil, to taste

Instructions
  1. Preheat oven to 425 degrees F.
  2. Lightly butter two 10-ounce ramekins or coat with nonstick spray.
  3. Divide marinara sauce evenly into the ramekins.
  4. Top with eggs, milk, and cheese.
  5. Season with salt and pepper, and desired seasoning, to taste.
  6. Bake until egg whites are cooked through, about 15-20 minutes.
  7. Serve immediately.
