It’s almost Valenitne’s Day, so let’s talk LOVE.
As in ….
You’re gonna love how ridiculously easy these frozen yogurt bites are to make!
And you’re gonna love how healthy they are, too!
And you’re gonna love how much your kids love scarfing down something that is so easy and healthy … and that you just loved making for them!
It’s a love fest! (We warned you!)
So just exactly why are you gonna love these so much? Hmmmmmm … did we mention three ingredients and maybe five minutes of prep? Oh yeah – that’s pretty darn lovable!
And you have just sooooo many options!
So, let’s get started …
For one thing, you’ve got chocolate options. You honestly don’t even have to use chocolate at all (and of course we tested that for you! ). But since Valentine’s Day and chocolate-covered strawberries go hand-in-hand, we highly recommend swirling in the chocolate, too!
Our testers preferred when the mini chips were even a little more “mini” – so we gave the chocolate chips a quick trip though our food chopper, as shown above. But you can certainly keep the mini chips whole, if you need to save a minute or two.
We definitely don’t recommend leaving out the jelly, though. While we’d really hoped that simply freezing Greek yogurt would be delicious enough to win raves from our tasting minions, that just didn’t happen. No one liked the yogurt-only version. At all. As in … they really didn’t even want to bother finishing their sample bites. Drat! The yogurt-only versions were healthy, sure. But another part of the THK requirement is that our recipes also have to be delicious!
Pure-fruit jelly was the answer. It perfectly amps up the strawberry flavor of these yogurt bites, so that our testers were literally chowing them one after another (uh-huh … loving them!!!). Gretchen’s kiddos actually argued over the last few yogurt bites! (Does yogurt love trump sisterly love????)
Luckily, it takes just moments to mix up the crazy-good Greek yogurt concoction, so it’s easy to stop sibling arguments by just whipping up another batch!
If you use molds like we did in the photos above, after you spoon the yogurt into your molds, tap the molds gently on your counter so that the yogurt levels out across the top of each mold. In the photo on the right, you can see that, after we tapped the mold on the counter, the mixture leveled itself smoothly as compared to the photo on the left.
Now, before you pop these beauties into the freezer, you’ve got more options! (Here’s where it gets fun!)
Would you like to turn these yogurt bites into mini Greek yogurt popsicles? Our kids (and … ahem … our husbands, too) sure loved eating these as mini pops! And it’s simple! Before freezing, you just need to insert some sort of “popsicle stick.” You could, of course, use those little white candy sticks, or …
A super-festive way to customize these yogurt bites for different holidays (like we did here for Valentine’s Day) is to use pretty, colored paper straws. The straws make great popsicle sticks! For ours, we cut the paper straws in thirds, and they were just the right size. Really sharp scissors will get the job done, but if you find that your scissors are dull or smashing the straws, you can also use a sharp chef’s knife for nice, clean cuts, as shown in the photo above.
Don’t have any paper straws? No worries! You probably have some toothpicks on hand! Choose colored toothpicks to coordinate with holidays or specific party themes. You can even tie pretty ribbon or food string into a sweet little bow on each toothpick, like we did for the photo above. It’s actually a lot easier than we’d imagined, especially if you tie the bow before you insert the toothpick into your yogurt popsicles for freezing.
Not in a popsicle mood? No worries! Forget about popsicle sticks, and maybe try using a smaller mold – these are just as darling as little bite-sized minis. (But we’ll warn you now … you may find yourself grabbing one … or two … every time you walk by your freezer!)
One quick note about popsicle and candy molds, though. We definitely found that flexible silicone molds are the easiest to work with. The frozen yogurt bites just pop perfectly out of flexible molds – much better than they do out of hard plastic candy molds (although those can work, too, in a pinch).
But wait … don’t have a festive, holiday-shaped mold? No problem! Just make yogurt dots! Frozen Greek yogurt dots are a perfect summertime cool-off treat on a hot day! (Hint hint … bookmark this recipe to make later this summer …)
To make dots, just spread some parchment on a baking sheet and use a spoon to form little dollops, then freeze those to make dots. This can be so totally darling! Remember the Ghoulish Greek Yogurt Eyes we featured in our Spook-tacular Halloween Round-Up? Too stinkin’ cute … and so easy! Honestly, that’s kinda what got us thinking about frozen Greek yogurt bites in the first place!
So, really … chocolate or no chocolate, heart shapes or easy little dollops … there are just so many ways to enjoy this recipe! But we promise … these yogurt bites will be delicious no matter what options you choose.
