Simple Recipes: Chocolate Mug Cake


Late Night Treat

I know mug cake recipes are one a penny on the internet, but I was itching to do another food post after seeing that I’d slacked off a little last year in my roundup. I was going through the things Miguel and I make on the regular and thought “hey, I’m sure people need to be reminded that they can make a chocolate cake in a few minutes with ingredients from the cupboard, it’ll really help with all of those New Year’s resolutions!”

This is what we nudge one another to go and make when we’re sat binging on a TV series all night and know we’ve ran out of sweet treats. Whilst I still have enough chocolate to open up a shop after Christmas, I had no regrets cooking this baby up in about 3 minutes flat. Take note…

You’ll need…

4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
2 tbsp melted butter (or vegetable oil)
3 tbsp water

Method

Making this thing is easy peasy. Mix together all of your dry ingredients in a microwavable mug, then pop in the butter or oil (depending on what you have to hand – like I said, this is a day-before-shopping kind of dessert!) and mix together until it forms a paste similar to the one pictured above.

At this point you can also pop in a drop of vanilla essence if you have any to hand, or even chocolate chips. I’ve also heard a teaspoon of Nutella or peanut butter dropped in before cooking is heavenly, but I’ve not experimented myself so can’t confirm…!

Then all you need to do is pop it in the microwave (on a plate to avoid spillage) on full for one minute. Timing can vary based on your microwave, so it might take a little bit of tasty trial and error, but 1-1.5 minutes should produce a soft goopy centre – which is what you’re after! Think of it as a brownie – it’s far better underdone, and there is no egg to worry about! If you’d like it to be more of a cake consistency, cook for two minutes, but don’t overdo it, as it can become dry very quickly.

Serve up

Miguel and I find one mug cake between us does the job, so usually I spoon it out into a bowl with some ice cream (yep, an ice cream scoop is on my shopping list after the feeble attempt above!) and we gobble away on the sofa!
