| Recipe | Stuffed Peppers For O-Bento


Thinking up stuff for Hiro's lunch is really hard at times. He pales at the thought of eating sandwiches and is baffled at how people can eat them or bread everyday. I think this is a cultural thingamajig? He doesn't like ready meals either so I do my best when I have the time and energy to make up something for him.

Usually, his o-bento consists of rice (another cultural thingamajig), sometimes pasta and something, anything that I can rustle up though quite often he has to have the previous night's leftovers.

Lately I have been making a collection of o-bento friendly recipes. Stuff I can make and add to his lunchbox over a couple of days. Here is one of my latest addictions:





| Ingredients |

3 or 4 Green peppers - I use Turkish ones because they are cheaper and milder with a rounder flavour. They are also smaller so work better in a lunch box.

300g Minced pork

1 Egg

Minced ginger to your taste
3 tablespoons of panko (Japanese breadcrumbs)

2 tablespoons of katakuriko (potato starch)
2 tablespoons sake
2 tablespoons shouyu (Japanese soy sauce)
1 tablespoon Worcestershire sauce - Lea & Perrins.
Salt and pepper to taste

| Method |
1. Mix together mince, ginger, egg, salt, pepper, Worcestershire sauce and panko into a bowl and mix well. Get your hands in and knead the mix into a big ball and set aside.
2. Top and tail the peppers then slice them into 3 rounds.
3. Put the peppers slices into a plastic bag or bowl and sprinkle the katakuriko over it ensuring that they are all evenly coated.
4. Stuff the pork mixture into the peppers slices.
5. Heat some oil in a pan and fry the stuffed slices. Sprinkle in some sake and shouyu and cover the pan.
6. Once one side has browned, turn the slices over and add the rest of the shouyu and sake and brown the other side.
7. Allow to cool and then add to fussy husband's lunchbox!
