Two years ago, my cousin took me to
Lucille's Smokehouse BBQ in LA. They're actually known for their BBQ Ribs (I don't like bbq ribs so much), so I ordered the
Pulled Pork sandwich. It was SO. GOOD. I'm not here to talk about Lucille's meats, however.. I'm here to talk about the amazing platter of biscuits and apple butter that they serve you as an appetizer (for free!).
The biscuit was fluffy, flaky, buttery and
sweet. The apple butter.... was out of this world
fantastic. I found a couple of apple butter recipes online, but all of them calls for freeze-dried apple. I don't know where to buy freeze-dried apple, to be honest. And when I tried making apple chips myself, it was a huge fail (the chips stuck to the parchment paper!). I wanted a recipe that's much simpler, so I thought... why not just use applesauce? For sure it's going to be okay, right? Of course it does!
Applesauce (for the Apple Butter. You can use store bought, of course)
1 apple of your choice
3 Tbsp water
1 Tbsp sugar
1/2 tsp cinnamon
1. Cube a peeled and cored apple.
2. Combine all the ingredients in a saucepan. Bring it to a boil until the apple cubes are soft to touch.
3. Remove from heat; mash the apple.
4. Let it cool.
Apple Butter 1/2 cup of butter, softened
2-3 tablespoon of Applesauce
1/2 tsp of cinnamon
1/2 tsp of agave syrup (optional)
1. Whip the butter, add in cinnamon whilst whipping.
2. Add in 2 tablespoon of applesauce. If you can't taste the apple flavor, add in another tablespoon.
3. If it isn't sweet enough for you, add the agave syrup.
4. Store in an airtight container.
Sweet Biscuit (good enough on its own!)
Makes 4 biscuits
Recipe adapted
here 1 cup all-purpose flour
1/8 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/3 cup confectioner's sugar (5 Tbsp)
1/8 cup cubed butter, cold
1/3 half-and-half
1. Preheat oven to 350F.
2. Sift together all the dry ingredients, except for the 1/8 cup of all-purpose flour.
3. Add in the butter. Using your hands, cut in the butter into the flour.
4. Pour the half and half over your dry ingredient. (If you don't have half and half on hand, you can substitute by melting a pat of butter and pouring enough milk until you have 1/3 cups full)
5. Knead everything together
GENTLY until it form a sticky dough.
6. Spread remaining flour onto your countertop.
7. Turn dough on all sides until everything is covered in flour.
8. Roll the dough
GENTLY into an inch thick slab (I did half an inch thick here)
9. Using your biscuit cutter or round cookie cutter, cut into the dough.
10. Place in a cookie tray lined with parchment paper, and bake for 12-14 minutes.
Aside from good ol' Filipino breakfast, I find that nothing is as satisfying as a platter of hot biscuits and butter as my first meal for the day. ♥
