Soft Gingerbread Sandwich Cookies paired with Califia Farms Vanilla Almondmilk.
Now, if you will indulge your inner child for a quick sec, these cookies taste just like Oatmeal Creme Pies. Except these are holiday because GINGERBREAD!! Have you ventured into the gingerbread world yet? I’ve got muffins and terrariums and lattes and smoothies on my gingerbread must-make list.
But seriously, those terrariums!! I’ve been freaking out over them for 2 whole days. And I think that smoothie is in my very near future (i.e. tomorrow, well actually today because I’m typing this post yesterday so that makes tomorrow today. You know what I’m saying? It’s like when you’re watching The Today Show and they’re like, “tomorrow on Today.” And you’re like…”what?…oh. I get it.”)

If you’ve ever wondered what a day in the life of me looks like, I spend most of my time debating which pictures I should share with you guys. I mean, I spend an obscene amount of time clicking back and forth between 2 pictures trying to decide which one is better. My life is like a daily eye doctor’s appointment: Which is clearer? 1 or 2? 1 or 3?
And then sometimes I just can’t decide which photo to choose so I pick both, which is what I did below.
Well, that’s not actually what a day looks like because most posts are built in the late hours of the night. I’ve always found that I’m most creative at night. Which is weird because I’m a total morning person…I LOVE mornings. I read this article (or I read one paragraph from an article) about how people with creative jobs (I’m assuming taking pictures of food falls into the ‘creative job’ category)…do them best at their off hours. Like since I’m a morning person I’m most creative at night because my mind isn’t as sharp and doesn’t make as many logical connections, which allows for creativity. So clearly this means I should take lengthy naps in the middle of the day. That way I can be a morning person and a night person.
I call me getting distracted and going off on a tangent ‘creativity’…when you might have a different word for it. You may just call it blabbering on and on.
So these gingerbread cookies aren’t like gingersnaps. Because I wouldn’t be me if I was serving you crunchy cookies (but we won’t get into that discussion again).
These taste like gingersnaps, but the texture is soft. And soft cookies are key to cookie sandwiches. If your sandwich cookie cookies are hard, you’ll bite into them and frosting will go all directions except into your mouth. Which is quite a bummer.
So make these soft ginger cookies and chase them down with a refreshing glass of Califia’s Vanilla Almondmilk. It’ll be so holiday you can’t even deal.
P.S. If you want to make your oatmeal with Califia Farms Vanilla Almondmilk and then top the whole thing with a gingerbread cookie sandwich…I support you whole heartily. And I assure you it’s delicious because I had it for breakfast a couple weeks ago. I mean, I had to try it for you first.
