Teacher Week 2015- Make ahead Meals


Today for Bloghoppin's Teacher Week the topic is Make ahead Meals!


Teachers are busy, yo. I find if I don't meal plan, our nightly dinners turn into take out and fast food. Which can quickly derail my healthy eating plans!
One of my favorite recipes for the crockpot is Fiesta Chicken. Chicken, corn, black beans, salsa and cream cheese! So easy, and SO good. I add a bit of rice to the end. You can eat it as is, add cheese, add sour cream, eat with chips or stuff tortillas. So many options! (You can find a great recipe for it here.)
Some of our other "go to meals" include:

  • Shrimp stirfry- frozen, cooked shrimp; frozen veggies; and stirfry sauce. Easy peasy.
  • Trader Joe's Chile Lime Chicken Burgers made using the George Foreman, so I don't have to turn on the oven!
  • Trade Joe's Roasted Chicken Patties- microwave and done. High in protein, and delicious.
  • Turkey meatloaf muffins- stovetop, ground turkey and egg whites
  • Noodles with sauce- zucchini noodles, and our favorite Paul Newman sauce!

I've tried freezer meals twice, with moderate success. I'm currently searching for healthy and easy meals to add to our stash for this school year!
