Salmon Skewers

We can’t feature a whole slew of Mediterranean recipes without featuring some great ways to serve up fish! Salmon is a really simple and healthy fish to incorporate in to your family’s recipe repertoire. It is hard to mess up and since you can serve it at lots of different temperatures, it’s perfect for even the not- so- confident home chef.

You can play around with lots of different flavor profiles with salmon, but fresh dill is one of my favorites! I shower my salmon cubes with chunky sea salt, cayenne, garlic salt and herbs. Then, black sesame seeds for a beautiful pop of color.

If you are using wooden skewers, make sure to soak them before you place them over the fire! I highly suggest investing in a set of metal skewers, especially as we enter the summer months (lots of skewer/kebob recipes coming up!) …I promise you will get lots of use out of them!

Greasing your grill plate or grill is very important when you make salmon skewers! The last thing you want is for your beautiful skewers to fall apart! Use butter or a high heat oil like vegetable or coconut. Be gentle when you flip, salmon is a delicate fish.

If you are using a grill, make sure to scrape it clean first…no one likes the dark grill marks on the bright pretty salmon!

2 salmon filets, bones and skin removed
metal or wooden skewers
1-2 lemons, sliced in to thin slices
1 tbsp black sesame seeds
1 tsp crushed red pepper
1 tsp lemon zest
big pinch of sea salt
1 tbsp of chopped fresh dill

Cut salon in to 2 inch cubes. If using wooden skewers, soak them in water for 30 minutes prior to using them. Layer salmon and then lemon on to the skewer. Shower with all the spices and herbs. Grill till salmon is cooked to your liking. I like mine a bit pink in the center still…Squeeze fresh lemon over salmon if you wish, garnish with more sea salt and herbs!
