Gifts from the Kitchen: "Williams-Sonoma Store Scent" Simmer Kit

Sometimes I am at a complete loss for gifts for loved ones. For my mom's birthday recently, I drew inspiration from her Pinterest boards, picking several little things I could make or buy to treat her to fun gift.
I noticed, like me, she had pinned this post at One More Moore for the "Williams-Sonoma Store Scent" that you simmer in a pot. I also noticed that I had all the things needed to gift this item already lurking in my kitchen and pantry. Only problem is that I don't live close by, so whatever I sent needed to be a bit less liquid-y and perishable.
Here's my simple solution for a completely portable simmer kit -- just add water:
"Williams-Sonoma Store Scent" Simmer Kit
Ingredients:
1 lemon, thinly and uniformly sliced (about 1/4" slices)
1 vanilla bean
2 sprigs rosemary

Directions:
Heat oven to 170 - 200º F, and line a baking sheet with parchment paper. (You can do more than one lemon and more than one baking sheet at a time, but it will take longer.) Discard ends of lemon, and lay slices on parchment-lined sheet in a single layer.
Place sheet in oven and let bake until they are mostly dried out. This may take anywhere from 2 - 4 hours, depending on your oven and the thickness of your slices, turning once or twice over the course of the cooking time. The lemons will darken as they dehydrate.
When the slices have almost no moisture left, turn off the oven and let the pan sit in there overnight. In the morning, check the slices to be sure there is no moisture left -- it there is, fire up the oven again and cook the offending slices until they are dry dry dry. Moisture left in your lemons will cause them to mold in storage.
Assemble your kit by placing all ingredients in a clear plastic gift bag. Fold down, and slip a piece of scrapbook paper folded in half over the folded bag. Staple on each side of the bag/tag. Glue on your label -- click HERE for the printable. Remind the gift recipient to add water and let simmer all day for a great fragrance in their home.
Use within a couple of weeks for best results.
