Recipe: Easy Enchilada Bake




I love making enchiladas, but over the years I've just gotten more and more lazy with it. So now, my enchilada recipe has turned into this delicious and super easy enchilada bake.

You will need:
olive oil (1-2 Tbsp)
1 lb ground meat (I use ground turkey)
taco seasoning (about 1/4 cup)
1 large can of enchilada sauce (you can use what you want, but I prefer green)
24 small corn tortillas (or flour if you prefer)
4 cups shredded cheese

Directions:
First, on the stove, cook your ground meat of choice in a touch of olive oil and taco seasoning. Your meat should be a golden brown, and cooked completely through. Let cool for about 15 minutes. Preheat the oven to 400 degrees fahrenheit.

Next, pour a small amount of enchilada sauce into a 13x9 inch baking dish. Spread the sauce around so it coats the bottom of the dish. Pour the remainder of the sauce into a separate dish that we'll use in the next step.


Dip a tortilla in the sauce, and place it at the bottom of the baking dish. Repeat, covering the dish in tortillas.


Add your ground meat over the tortillas like shown.


Add cheese as well...


Repeat the layer of sauce covered tortillas/meat/cheese, until you've filled your baking dish. On top of your final layer, add a bit more cheese. Bake in the oven (preheated to 400 degrees) for 30 minutes.


Let cool for about 10 minutes and...


Optional step: While cleaning up, always let your guests lick the bowl.
